Swami Catering is tucked away in Silver Plaza, which is near Satyam Tower in the Randher area, right on the way toward Olpad. It’s a decent location because it’s easy for people to find us when they’re driving through. The plaza itself is usually busy with people going to different offices, so there's a constant hum of scooters and talking outside our door. Inside our space, it's pretty much all business. We’ve got the heavy-duty stoves set up and plenty of room for the guys to stand around the prep tables. Randher has a specific feel to it, and we've been part of it for a while now. We don't have a showroom or anything fancy to look at. If you come in, you'll see stacks of crates and maybe some fresh coriander being cleaned on the counter. The work is hard, and the hours are long, especially when there’s a local function that needs food delivered early. We tend to focus on the basics of getting the ingredients right and making sure the staff knows their jobs. We don’t really use a lot of technology, just a basic phone and a lot of handwritten notes pinned to the wall. It gets quite warm in the afternoons when all the burners are going at once, but we just open the back windows to get a bit of a breeze from the Olpad side. It is just a normal kitchen where everyone works together.
