We have been based at the Kribhco Guest House in Hazira for a while now. It’s a busy spot, especially with the industrial area around here. Most days start pretty early, around 5 or 6 AM, when the first deliveries of vegetables show up at door number 11. You can hear the crates rattling and the staff talking while they start the prep work. Hazira can get quite hot and dusty, so we try to keep the kitchen area as cool as we can with those big industrial fans. It isn't a fancy setup, just a lot of large pots, gas burners, and people who know what they're doing. Sometimes the guest house gets crowded with visitors, and that's when things really pick up for Shiva Caterers. We just focus on getting the food out on time. There's no big office or anything, just a small desk where we keep the ledgers and handle the phone calls. If you walk by, you’ll likely smell the spices or see someone unloading sacks of rice. We've seen the neighborhood change a bit over the years, but the guest house stays the same. The guys working in the back have been with us for a long time, so they know the routine by heart. We don't spend much time on decorations or anything like that. It’s mostly about the cooking and making sure the containers are packed right before they head out to the local sites.
