If you walk down Mandir Wali Gali in Yusuf Sarai, you'll hear our machines before you ever see the shop. We have been at 41521 for a long time now, grinding wheat into flour for the families around here. It’s a small space, mostly taken up by the big grinding stones and the electric motor. The air is always a bit white from the flour dust settling on everything, even our clothes and hair. People come in with their own bags of grain they bought from the market or brought from their villages. We weigh it, dump it in the top, and wait for the fresh, warm flour to come out the bottom. It smells like fresh bread all day long. Yusuf Sarai is a very busy area, especially near the temple, so there’s always people walking by and sticking their heads in to say hello. We don’t just do wheat; sometimes people bring maize or chickpeas too. It's a simple business but it’s important for the kitchen. The machine needs a lot of maintenance to keep the stones sharp, so that’s what I do when we don’t have customers. My father did this before me and I just kept it going because people always need fresh atta for their rotis. We keep things clean as much as possible, though the dust is hard to fight. It's just a local shop for local people, nothing more than that. We stay open late most nights to help people coming home from work.
