apka bhojnalya

Our place is located on Jassorkheri Road in Rohad, right there on the bypass. We are tucked away a bit behind the Castrol godown, so you have to look for us if you are not from around here. It is a simple bhojnalya, which is why we called it apka bhojnalya. We mostly cook the kind of food we eat at home. It is just basic meals for truck drivers, workers, and people passing through on the bypass who are hungry. We do not have a printed menu that stays the same; we just make what is fresh and available in the market that day. The kitchen is small and we are usually back there busy with the stove. It gets very hot in the summer, but we keep the fans going as much as we can. We have some tables and chairs, nothing fancy at all. People come in, sit down, eat their fill, and then get back on the road. We have been at this spot for a while now. It is a lot of work, waking up early to get the lentils and vegetables started. We do not use any of those fancy cooking techniques you see on television. It is just honest cooking. Sometimes we run out of things if a big group comes in unexpectedly. That is just how it goes with a small kitchen. We like seeing the regulars who stop by every time they drive this route.
