Our place is known as Dilip Caterers. We don't have a big fancy street address written down in the books, we just operate from our spot here. It is a local setup where we get all the cooking done. Most of the time we are busy with the big metal tiffins and the heavy gas burners. It gets pretty loud when the prep work starts early in the day. We have a few regular guys who help with the heavy lifting and the actual cooking. It’s a lot of manual work every single day. We don't have an office with air conditioning or anything special like that. It is mostly a kitchen and a storage area for the plates, the bowls, and the serving spoons. We spend our days making sure the ingredients are fresh and the recipes are followed like we always do. We've been doing this for a while under the name Dilip Caterers. It is a simple life to be honest. You wake up, check the orders on the list, and start the fire for the pots. The smell of onions and garlic is always hanging around the place. We don't really have a marketing team or anything like that to show off. People just know us from word of mouth in the neighborhood. We keep the equipment clean and ready for the next job. Sometimes we stay up late finishing the prep for a big morning order. It is just how the catering business goes for us.
