Gayatri Madras Cafe & Pau bhaji

You can find us at the Amrutalay Complex in Rajkot. We are right near Gayatri Bhel, which is another local spot people know well. Our place is at Parevadi Chowk, specifically opposite the Bharat Petroleum pump. It’s a very busy intersection, so there is always the sound of horns and people moving about. We serve a mix of things, like South Indian dishes and Pau bhaji, which is why we have the name we do. The 360003 area is quite active, and being at Parevadi Chowk means we get a lot of travelers and locals alike. The cafe isn't large. It’s a functional space with tables that are almost always in use. We start prep early in the morning for the batters and the bhaji. I’m usually there making sure the stoves are ready and the place is wiped down. It gets quite hot in the kitchen, especially in the afternoons, but that’s part of the job. We don't have a corporate office or anything. It’s just us and a few helpers making sure people get their food quickly. Most people find us because they are getting petrol across the street or they just live in the complex. We don't use fancy words to describe what we do. We just cook the food and serve it to whoever walks in. It’s a regular Rajkot spot for a quick, simple meal.
