Dosa Bite

We are located right on Chandreshnagar Main Road here in Rajkot. Most days start early for us at Dosa Bite. We have to get the rice and dal ground up before the sun gets too high because it really heats up in Chandreshnagar. Our shop is pretty easy to find since we are quite near Deep Electronic. It isn't a huge place but it works for what we do. Usually, the traffic on the main road is loud but you get used to it after a few months of working here. We spend a lot of time just standing by the tawa making sure the heat is right. Sometimes the batter is a bit different if the weather changes, but that is just how it goes with this kind of cooking. People from the neighborhood stop in and we know most of them by now. It feels good when the same faces come back every Tuesday or Friday. We don't have any fancy decorations or anything like that. It’s a lot of standing on your feet all day long. By the time we close up and head home, we are usually pretty tired but it’s okay. We just focus on getting the food out to whoever sits down at the table.
