We don't use any corporate scripts or have big manuals on how to talk to people. We just say hello and ask what you want to eat. The kitchen is the heart of the place, and it’s usually quite busy. We spend most of our time back there prepping and cooking. The dining area is simple and meant for eating, not for lingering for hours. We get a lot of neighbors coming in, which makes the place feel like part of the community.
