If you have ever been to the Patiala bus stand, you probably saw us. We are right across the street. Being a dhaba in this spot means we never really have a quiet moment. Buses come in and out all day long, and there is always a crowd of travelers looking for a meal before their next trip. We have been at this location for a long time now. The building is old and the paint is peeling in a few corners, but the tables are sturdy and we keep the floor swept. It gets quite dusty because of all the vehicles outside, so we are constantly wiping things down. We serve the usual stuff you’d find in a Punjabi dhaba. There are no menus on fancy paper here; we just tell people what we have cooked for the day. Most people come in for a quick dal or some rotis. The kitchen stays hot because the tandoor is running almost constantly from morning until late at night. Our staff is mostly local guys who know how to handle a rush when three buses arrive at the same time. It’s not a place for a quiet romantic dinner, but if you are hungry and waiting for a bus to Chandigarh or Ludhiana, it works. We don’t do anything fancy, just standard food for people on the move. There is plenty of tea brewing at all hours too.
