Vikas Snacks

Running a shop like Vikas Snacks right near the Hauz Khas Metro Station means things never really quiet down. We are tucked away in Ravi Raj Market in Chawri Bazar, and the crowd is just constant from the moment the first train starts running. It gets really hot in the kitchen, especially during the summer months when the oil is bubbling and the fans are just pushing warm air around. We spend most of our time prepping dough and chopping things up so we are ready for the rush. You see all sorts of people coming through here, from office workers in a hurry to tourists who look a bit lost in the narrow lanes. The address is 3564/12, and if you know Chawri Bazar, you know how packed those streets get. We have to get our supplies delivered very early in the morning before the rickshaws block everything up. Sometimes we run out of things faster than we expected, and then it is a scramble to get more ingredients ready. It is a lot of standing on your feet and dealing with the steam. We don't have much time for sitting around. The floor needs constant sweeping because of all the foot traffic, and the noise from the metro station is just part of the background now. It is just a regular snack place trying to keep up with the neighborhood pace.
