Ram Bahadur Singh Halwai

Our shop is located at 2795 in Gali Arya Samaj, right in the heart of Sitaram Bazar. If you know anything about Chandni Chowk, you know how crowded, loud, and narrow the lanes get. Ram Bahadur Singh Halwai has been part of that noise for a very long time. Being a halwai in this area means waking up when everyone else is still sleeping. We start the milk boiling and get the sugar syrups ready before the sun even thinks about coming up over the old buildings. The streets here are too small for big trucks, so we have to carry everything by hand or on small carts. It’s a very traditional way of doing things, and we haven’t seen much reason to change it after all these years. We make the sweets and the snacks the old-fashioned way, using big iron kadhais over high heat. It’s hot and sweaty work, especially in the middle of a Delhi summer, but the smell of frying samosas or boiling milk is something you just get used to. We don’t have a fancy storefront with glass displays and air conditioning. It’s more about the taste and the history of the bazaar. People come to us for their family weddings and festivals because they know we’ve been here since their father's time. We don't use machines for much; most of the work is done by hand with a lot of effort. Sitaram Bazar is a place with history, and we’re just glad to be a part of it.
