Walking through Khari Baoli, you probably know how crowded it gets with the smell of spices and people rushing around. Our place is located at 403, right in the thick of all that noise. We mainly focus on khoya here. It’s a messy business sometimes, dealing with milk solids and trying to keep everything fresh when the Delhi heat starts climbing. The shop has stayed in the family for a long time. My grandfather was the one who started it, and now we just keep things going without making a big fuss. Fancy machines aren't part of our setup; we just use the same old tools we've always had. People come from different parts of the city for their sweets and they need the base material from us. Some days are so busy that there is barely time to sit down or grab a quick lunch. That specific market smell is always hanging in the air, a mix of everything you can imagine. Khari Baoli isn't a place for everyone because of the constant shouting and movement, but we are used to it by now. Khoya is kept in large metal containers and sold by weight. There isn't much to the shop besides the main counters and the dark storage area in the back. Advertising isn't something we do; people just find us by word of mouth. It's a very basic, practical setup for a dairy business.
