Bablu Varity Kulfi Wale

You’ll find us on Maliwara Road, right near the Jain Lal Dharmshala in Chandni Chowk. If you know this area, you know how crowded it gets every single day. It’s a narrow lane and there’s always people pushing past or carrying big boxes. We make kulfi. It’s a small shop, mostly just the big metal containers where we keep the kulfi frozen in ice and salt. My name is Bablu and I’ve been here for a long time. People come here when they’re tired of walking through the hot market. It’s very loud outside with the rickshaws and the shouting. We have different flavors, but we don't do anything too crazy. It’s just the traditional way of making it that we learned. The walls of the shop are old, and we’ve got a small fan that doesn’t do much against the Delhi heat in June. Most people just stand on the street and eat their kulfi quickly. We don't have chairs or anything for people to sit. It’s a fast-paced spot. Sometimes we run out of the popular ones by evening time. The ground is always a bit wet from the melting ice and the cleaning we do. It’s not a fancy dessert parlor. It’s just a place in the middle of the old city where you can get something cold. We’ve seen the market change, but our way of doing things stays the same.
