Running a shop in Chandni Chowk means you're always in the middle of everything. We are at 155 Kucha Ghasi Ram. It’s a narrow lane, like most places around here, and it stays busy from morning till night. We do sweets, mostly, but the catering side keeps us on our toes too. We’ve been here at Adarsh for a long time. The kitchen is always going. You’ll see the big vats of milk being stirred and the trays of barfi being set out. It’s noisy and crowded, but that’s just life in this part of Delhi. We don't have a fancy storefront. It’s practical. We make the traditional stuff that people expect for festivals and weddings. When we do catering for an event, it’s a lot of coordination, getting the food from this small lane out to wherever the party is. We’ve got a group of workers who have been with us for years. They know the recipes by heart, no need for books. Sometimes we run out of the popular sweets by late afternoon. We just make more the next day. It’s honest work. The walls are a bit stained from the steam and the floors are worn down, but the food is what matters. People come to us because they know we’ve been here forever. We just keep doing what we know. The smell of ghee is always in the air here, and we wouldn't have it any other way. It's a tough place to work but it's our home.
