Down in Jawahar Nagar, specifically in the Kharpipe East area, the air usually smells like sugar and burnt flour if we’ve had a long day. Too Good Food Cakes is where we spend most of our waking hours. It’s a small place, and the ovens stay on for a good chunk of the morning and afternoon. We don’t have a big storefront with neon lights; it’s more of a place where we actually do the baking. There’s always a fine dusting of flour on the floor and the counters, no matter how many times we wipe them down. We have a big mixer that makes a lot of noise, and sometimes we have to shout over it to hear each other. The cakes come out and sit on the wire racks to cool, and that’s when the place feels the smallest because there’s nowhere to walk. We started this because we liked the work, and it’s stayed that way. We get orders for birthdays and sometimes just for people who want something sweet with their tea. It’s not a fancy operation. We just crack the eggs, mix the batter, and watch the timer on the oven. Sometimes the delivery guy is late, and we all get a bit stressed out, but usually, it’s just a routine of baking and packing boxes. It gets really hot in the summer, but the smell of fresh cake makes it okay.
