Shwarma King

We are located at Kemps Corner in Mumbai, right in the B Wing of the ground floor at shop number five. It’s near Cornelian Property, and if you know this part of the city, you know it’s a busy intersection. Shwarma King is just a small corner where we set up the vertical rotisseries every morning. I’ve been working the meat shaver for a long time now. It’s a skill to get the slices just thin enough. The smell of the roasting meat drifts out onto the street and that’s usually how people find us. We don't have a lot of space inside, just enough for the prep table and the fridge. Most people just grab their rolls and eat them while they walk or wait for a cab. Mumbai is a fast city, so we have to be fast too. We start prepping the sauces and cutting the vegetables long before the first customer arrives. Sometimes the humidity makes it feel twice as hot inside the shop, but we just keep going. It’s a small team of three of us. We share the work and keep the place as clean as we can. We don't have a website or any of that stuff. We just focus on the food and making sure the pita is fresh. It’s a simple life but we stay busy from opening until late at night when the city finally slows down.
