The ovens at Patisserie Uno start heating up pretty early in the morning here on Central Street in Ghatkopar West. By the time the sun is up the whole area smells like bread and sugar which is the best part of the job I think. It is a bit of a mess in the kitchen with flour on the floor and sticky counters from the fruit glazes we use. We are not one of those fancy high-end bakeries where everything looks like a piece of art. Our cakes are simple and we focus more on how they taste than making them look perfect. The shop front is small and we only have a couple of stools for people to sit on while they have their coffee. Most customers just grab a packet of biscuits or a loaf of bread and head off to work. My hands are usually covered in dough for most of the day so answering the phone is always a bit of a struggle. We have been in this spot for a while and we know exactly which neighbors want their bread extra toasted. Sometimes we burn a batch of cookies if we get too busy talking to a regular but we just laugh it off and start again. It is a lot of hard work and early hours but it feels good to see the shelves get empty by evening time.
