Parathas

We are called Parathas. Our address is Nariman Point LBS Marg in Ghatkopar West. It’s right next to MVM. People sometimes get confused because the address mentions Nariman Point but we are definitely out here in Ghatkopar West on the LBS Marg side. It is a very busy road with lots of buses and autos. We are constantly rolling out dough on the wooden boards. The tawa is always hot and we go through a lot of oil and butter every single day. Being next to MVM means we see a lot of students and people working nearby. The shop gets very smoky when the heat is high. We don't have much of a decor, just some benches and the counter. Ghatkopar West is a fast-moving place. We have to keep the parathas coming out quickly or people get impatient. LBS Marg is always dug up or has some traffic jam, so it's a bit loud. We just focus on the dough and the fillings. The rolling pin makes a steady sound all afternoon. We use big sacks of flour that we keep in the corner. It's hot work standing by the fire. We don't have any fancy air conditioning. We just open the front and let the air from the street come in, even if it's a bit dusty. Usually, we are too busy with the orders to notice the noise. We just keep our heads down and cook.
