Milan Masala is situated on Masjid Street along LBS Marg, inside Kartar Estate at number 267. The first thing you notice when you get near our place is the smell. Spices have a way of filling up the whole air, especially when we are grinding them. We’ve been working out of Kartar Estate for a while now. It’s a bit of an old industrial building, but it suits the masala business perfectly. LBS Marg is always busy with trucks and traffic, which makes it easy for us to get our supplies delivered. Inside the unit, we have the grinders running for most of the morning. It gets a bit loud and dusty with all the powder, so we wear masks while we work. We don’t have a big storefront for people to browse. Most of our work is about filling orders and packing the spices into bags. We handle everything from turmeric to more complex chili blends. It’s a family-run kind of thing, so we all pitch in with the cleaning and the weighing. Masjid Street has a lot of history with food and spices, and we feel like we fit right in. We don’t use any fancy packaging with bright colors; we just focus on the product inside. It’s a simple life, surrounded by the scents of cumin and coriander every single day. We just try to get the orders right and keep the machines running.
