La Chocolates is tucked away in Bandra West at 17/5/B. It is a small space, but we manage to get everything done inside. Bandra is always busy, but our little corner is a bit more tucked back than the main streets. We spend our mornings checking the inventory and seeing what needs to be made for the day. Chocolate is tricky because you have to be careful with the humidity in this city. We have a few small machines and some marble slabs that we use every day. It is not a big factory, just a room where we work. Sometimes the neighbors come in just to chat while we are wrapping the bars in foil or stacking boxes. We don't have a big staff, so if one of us is sick, things slow down a bit. We use a lot of paper and ribbon for the boxes, which always seem to get tangled up on the table. The shop is simple, with some shelves and a small counter where we talk to customers at 17/5/B. We don't do much advertising; mostly it’s just people walking by or folks who live in the buildings nearby. It gets quite warm in the afternoons, so we keep the AC running as much as we can to protect the stock. It is a lot of repetitive work, folding boxes and stirring pots, but it keeps us busy. We just try to make things that people will like to eat or give to friends at the end of the day.
