Kapoor Kulfi is located inside Janta Market at Marine Lines. Being in a market means it is always loud and there are always people bumping into each other. Our space is quite small, mostly taken up by the large cold pots where we keep the kulfi frozen. We don’t use modern freezers for everything; we still rely on the old ways of keeping things cold with ice and salt. It’s a lot of physical work, lifting the heavy lids and making sure the temperature stays just right so the kulfi doesn't get icy or melt away. Marine Lines is a busy part of the city, and Janta Market is even busier. We get a mix of shoppers who are tired from carrying bags and people who work in the nearby offices. They come to us because we have been in this spot for a long time. The floor is usually a bit wet from the melting ice and the walls could probably use a fresh coat of paint, but we are too busy to worry about that most days. We focus on getting the mixture right and making sure we have enough sticks and wrappers. It is a humble sort of life, working in the middle of all that chaos, but we wouldn't know what to do with ourselves if it was quiet. We just keep serving the kulfi one by one until the pots are empty.
