So, we are over in Kandivali East, right on the ground floor of the Rashmi building. Shop Number 1 is where we set everything up on 3rd Main. It’s a pretty busy street usually, but we like the energy. We don't have a lot of space, but it works for what we do. Making ice cream is mostly about getting the temperature right and keeping things clean. We spend a lot of our morning just prepping the base and checking the freezer settings. It’s funny how much work goes into a single scoop. We aren't a big chain or anything, just a local spot where we try out different flavors. Some work out great and some we don't ever try again. That’s why we call it a lab, I guess, even if it’s just a regular kitchen setup at the end of the day. The neighbors from around the 3rd Main stop by quite a bit after work. It’s nice to see familiar faces. We don't use any fancy machinery that does everything for us with a touch of a button. We do a lot of it by hand. Sometimes the power goes out in the area and we have to scramble to keep things frozen, which is always a bit of a headache. But that’s just how it is running a shop here. We keep the doors open and just focus on making something cold for when the sun is out. It’s straightforward work and we like it that way.
