Fairmacs Catering Company

Running Fairmacs Catering Company means our days usually start way before the sun comes up. It’s a lot of heavy lifting and the smell of onions and garlic that you can't ever really wash off your skin. We don't have a big office with a street address that people visit. Most of our time is spent in the kitchen or in the back of the delivery van. The floors are almost always a bit slippery even after we scrub them, and there's always a stack of crates waiting to be moved. It’s hard work on your feet all day, and we don't really have time for fancy talk. We just focus on getting the food right and making sure it arrives where it needs to go without any spills. The staff here has been together for a while, so we don't even have to talk much to know what needs doing. We’ve seen all sorts of events, from small parties to big ones that leave us exhausted for days. It’s not a glamorous life, and our hands are usually calloused from the knives and the heat, but it’s what we do. We don't have a mission statement or anything like that; we just want to make sure the pots are clean and the food tastes like it should. It’s a lot of noise and steam and rushing around. We just keep our heads down and cook.
