Chocolatiers

We started this small place in Mumbai Central, specifically in the Ishwar Krupa Society. It’s on the second floor of Kailash Apartments, at B/207, number 293. People sometimes get confused finding the door because the stairs are a bit narrow, but once they are in, they can smell the cocoa immediately. It’s just a few of us working here. We spend most of the morning melting stuff and trying to get the shapes right for the batches. Some days it’s too humid in Mumbai and the chocolate doesn't set well, which is really annoying for us. We don’t have a big fancy storefront or anything. It’s just the place where we work every day. My cousin helps out with the packing sometimes when he isn't busy with his other job. We’ve been at this spot for a while now. The neighbors in the building know us by the smell of the kitchen. We use a lot of sugar and milk. Sometimes the deliveries are late because of the heavy traffic on the main road. That’s just how it is in this city. We try to keep things clean and organized, but it gets a little messy when we have a big order. We aren't trying to be some big corporate brand. We just like making things that taste okay. Usually, we stay here until late at night. If you walk by, you might see us washing the big metal pots. It’s hard work on the arms, honestly.
