My place is over in Malabar Hill, right by Agar Bazar on Nepean Sea Road. I have been doing this for a while now, mostly from this one location. It’s a very different vibe from the rest of the city because Malabar Hill is a bit quieter, though Nepean Sea Road still gets its share of cars. The space where I make the ice cream is quite small, but it’s where all the work happens. I spend a lot of time standing by the machines and checking the textures of the different batches. It’s not a big factory; it’s just me and a couple of people helping out. We do everything by hand as much as we can. The kitchen smells like cream and sugar most of the day, which isn't a bad way to live. Sometimes the delivery van has a hard time parking on the street because it's so narrow near Agar Bazar. We have to be quick about loading things up. I don't really have a big marketing budget or anything, so most of the people who come here are just folks from the neighborhood who have seen the sign. The fridge handles are a bit worn out from being opened and closed a hundred times a day. It’s just a simple, local business where we try to do a good job with what we have. It’s a lot of cleaning and a lot of waiting for things to freeze properly.
