Our little shop is over on M G Road 9, and it’s been there for a good bit now. We call it Be Cheese because, well, we put cheese on almost everything we make. It’s a simple idea that started because we noticed people really seem to enjoy a good melt or a cheesy snack. The shop isn’t very large, so it can get a bit tight when the lunch rush hits. We spend a lot of our time prepping the different cheeses and making sure the kitchen stays organized. It’s just a few of us working here most days. M G Road is always noisy and moving, so it’s nice to have a place where someone can just grab something hot and keep going. We don’t do anything too complicated. It’s mostly just bread, cheese, and some heat. Sometimes the delivery guys are waiting out front and it gets a bit hectic, but we manage. We aren’t chefs with big degrees or anything like that. We just learned by doing it every day. It’s a decent living and we like being part of the neighborhood. If you walk past, you can usually smell the toasted cheese from the street. We just open up the shutters every morning and get to work. That’s pretty much the whole story of Be Cheese. It's nothing fancy, just what we do to get by and keep the customers happy.
