You can find us on the 2nd floor in the food court at Inorbit Mall in Malad West. It’s a far cry from Nana Chowk or Grant Road, but this is where we set up shop. Working in a mall means our days are tied to the mall hours. We spend a lot of time standing behind the counter, waiting for the weekend rush when families come through. It gets really loud in the food court, especially on Sunday evenings. We are constantly scooping and making sure the freezers are at the right temperature so nothing melts. It’s a lot of cleaning too, because sticky counters are just part of the job here. We don’t really have a back room, so everything we do is right there in front of the customers. Sometimes it feels like we are in a fishbowl. The staff here is just a few local guys and myself. We try to keep the flavors stocked up, but sometimes a delivery doesn't show up on time and we have to explain why we're out of something. It’s just the way it goes. We’re used to the bright lights and the constant hum of the air conditioning. It’s a busy life, and we’re always on our feet. We don’t do anything special, just show up, put on the uniform, and start the day. There is always someone wanting a sample, so we keep the spoons ready for the afternoon crowd and the evening rush.
