If you’re ever at the Forum Pizza Mall in Pandeshwar, Mangalore, you’ll find us up on the third floor. We are right there in the food court. It’s a different kind of environment than a standalone shop. You’ve got the mall music and the sound of people walking around all day. We spend most of our time behind the counter in the kitchen space. It’s a bit cramped, but we make it work. Being in a mall means we follow the mall hours, so we are often here late into the evening. We serve a lot of different people, from teenagers hanging out to families taking a break from shopping. We don't have a big story or anything. We just focus on getting the food out quickly because people in a food court are usually in a hurry. The Mangalore humidity can be tough, even with the mall's cooling, especially when the ovens are on. We do all the prep work ourselves, chopping and mixing everything every morning. It's a lot of repetitive work, but it keeps us busy. We don't do any big promotions. We just rely on the fact that people get hungry while they’re out shopping. It’s a fast-paced way to run a business, and you have to be on your toes all the time. We just try to keep things consistent and the workspace clean throughout the day. It’s just how food court life is for us.
