If you come down to Village Bawania in Mahenderagarh, you’ll find us at House Number 196 A. This is where Benarsi Devi stays, and it’s also where we do all the work for Bawania Pickle Producer Company Limited. The house usually smells like oil and different spices because there is always something being prepared. We do things the old way, mostly by hand, because that’s how we know how to do it. It’s a small operation but it keeps several of us busy all day long. We have to wait for the right season for different vegetables so we can make the pickles properly. The kitchen area gets quite busy and sometimes we have jars sitting everywhere waiting to be moved. Living and working in the same village means everyone knows what we are doing. People stop by to chat while we are working, which is nice. Mahenderagarh can get very dry and dusty, so we try to keep everything clean and covered up. We don't have a big marketing team or anything like that. It’s just us packing things into jars and making sure the lids are tight. It’s a lot of work on the hands but it feels good to see the finished bottles lined up on the shelves at the end of the week, ready to go out to the local shops.
