K S Catering Centre is located in Engapuzha. We’ve been cooking for the people in this area for a long time now. It’s a family business, and almost everyone in the house has helped out at some point. Our kitchen is pretty basic, but we have some very large pots because we often cook for hundreds of people at once. Engapuzha is a place where traditions are important, so we mostly stick to the recipes we’ve always used. The work is physically demanding. You’re standing over hot stoves for hours and lifting heavy trays of food. My back usually aches by the end of a long day, but seeing people enjoy the meal makes it worth it. We don't have a fancy shop front. Most people just come to our house or call us on the phone when they have a function coming up. We spend a lot of time cleaning up after we finish a big batch of food. The floor gets greasy and there are always mountains of dishes to wash. It’s not glamorous at all. We just try to make sure the food is ready when we say it will be. Sometimes we have to rush if there is a problem with the firewood or the supplies don’t arrive on time. It’s a bit of a scramble, but we always manage to get it done somehow.
