If you walk down Ashutosh Mukherjee Road, you’ll find us at number 80. It’s a busy stretch of road and there is always something happening right outside the front door. We spend most of our time in the back where all the actual work happens. The air usually smells like spices and fried dough, which is just how it goes when you’ve been doing this for as long as we have. It gets hot in the kitchen, especially in the summer months, but nobody really complains much because we’re used to it. We start early, before the sun is even fully up, to make sure everything is ready for the first people who walk in. The floor is usually a bit dusty with flour and the counters are always covered in containers. We don't have a big corporate office or anything like that. It’s just us and the machines and the boxes waiting to be filled. Sometimes the delivery trucks block the lane and the neighbors get a bit annoyed, but we try to move things fast. People know us by name around here. We don't use any fancy systems to track things, mostly just notebooks and a lot of memory. It works for us. We just keep our heads down and make sure the quality is what it should be. The street is loud, the work is hard, but it’s what we do every single day.
