Pahalwan Biryani

That’s what we do all day. We start the fire early to get the big pots going. You can smell the spices all the way down the platform. It's a small place, mostly just a counter where people grab their food before they catch a train. We see a lot of different people every day. Some are going to work, others are traveling far. The biryani is cooked in large batches. We don't use fancy plates, just simple stuff that’s easy for travelers. Mirpur Cantt is a unique place to work. It’s never quiet. Sometimes the platform gets really crowded and we have to move fast. We don't have a big seating area. Most people just stand and eat or take it with them in a packet. We focus on getting the rice and the meat right. It's the same recipe we've used for a long time. We don't change things much because people like it the way it is.
