Baba Biryani

You can find Baba Biryani on the 3rd floor of the Z Square Mall food court in Kanpur. The mall is located near Bada Chauraha, which is one of the busiest spots in the city. The pin code is 208001. Since we are in the food court, there are always a lot of people walking around and the sound of chatter from other tables is constant. We have a counter where we take orders and a small kitchen area behind it where the food is kept warm. We spend a lot of time serving plates and making sure we have enough napkins and spoons for everyone. The mall has big glass windows, but from the food court, you mostly just see the other shops and the escalators going up and down. It gets especially crowded on Sunday afternoons when families come out to the mall to escape the heat. We don't have our own private seating, so people just grab a chair wherever they can find one in the common area. We have to keep our station clean because the mall management is quite strict about that. The smell of different foods from the neighboring stalls mixes together in the air. It is a fast-paced place to work, especially when the movie theater nearby lets out and everyone comes up to the third floor at once. We just keep the food moving and the counter wiped.
