We’ve been here at Dimna Chowk for a while now. It’s a busy spot near Ashiana Enclave in Mango, so there is always a lot of traffic passing by. Our kitchen is small but we keep it moving. Most days start with chopping vegetables and getting the sauces ready. It gets quite loud when the burners are on high. We aren't doing anything fancy, just standard food that people seem to like when they're headed home or out with friends. Sometimes the exhaust fan acts up, but we manage. You can find us easily because we’re right by the crossing. The staff here has stayed the same for the last few years, mostly guys from around the neighborhood. We don’t really have a big office or anything, just the counter and the stove area. People stop their bikes, grab something, and head off. It’s a simple routine. We try to keep the place clean, though the dust from the road makes it hard sometimes. If you know Mango, you know how hectic Dimna Chowk gets in the evenings. We just keep cooking through it. There is a lot of steam and noise, but it's what we do. We don’t spend money on big signs or anything, just the name out front. It’s a decent place to work and the regulars know our names by now. That’s about all there is to it.
