Toran

Toran is located inside the Hotel Meru Palace on Ram Singh Road in Jaipur. The address is 302004, and being on this road means there is always the sound of horns and traffic outside our windows. We are a small part of the hotel, mostly serving the guests who are staying in the rooms upstairs, but we get people walking in from the street too. The dining area has a specific look that hasn't changed much over the years. We spend our mornings setting the tables and making sure the salt and pepper shakers are full. It is quiet in the mid-afternoon, which is when we usually sit down ourselves to have some tea and take a break. The kitchen isn't huge, so we have to be organized or we just get in each other's way. We don't do anything too complicated here. We just cook the usual dishes that people expect when they are traveling through Jaipur. Sometimes the electricity goes out for a minute and we have to wait for the generator to kick in, which is just part of living here. Our staff has been around for a long time, so we all know how to work together without talking too much. We just keep the place running and make sure the food is ready when the guests come down for their dinner after a long day of sightseeing.
