Republic of Noodles

If you find yourself in the Bani Park area of Jaipur, you’ll probably pass by the Lemon Tree Premier on Nirwan Marg. We are tucked inside there, right next to the Space Cinema. Republic of Noodles is where we spend our days cooking. It’s a kitchen job, so it’s hot and there is always something that needs to be chopped or stirred. We don't have any big corporate speeches about what we do. We just make noodles and other dishes for people who are staying at the hotel or walking in from the neighborhood. Jaipur can get incredibly hot, so we are always glad for the air conditioning inside. The restaurant has a certain look to it, but at the end of the day, it’s just a place to eat. We have our regulars who come in because they know the flavors, and we have travelers who are just tired and want a decent meal. We spend a lot of time worrying about the ingredients and making sure the floors are mopped. It’s a lot of hard work behind the scenes that most people don’t see. We aren't trying to be the most famous place in Rajasthan; we just want to get the orders out on time and keep the kitchen running smoothly. It’s a simple business, really. We just show up, do the prep work, and serve whoever comes through the door looking for a meal.
