La salsa punjabi take away

We run a small Punjabi takeaway shop at Shop-313 on Khatipura road in the Jhotwara area of Jaipur. Our place is situated near Bajrang das ji ki bagichi, which is how most locals find us. Since we are a takeaway, we don't have much space for people to sit down, so most of our work involves packing up meals for people to take home. The kitchen is the main part of our shop, and it stays quite busy from the afternoon until late at night. We spend a lot of time preparing the masalas and making sure we have enough containers for all the orders. Khatipura road is always moving with traffic, and we see a lot of people stopping their scooters or cars to pick up something on their way back from work. Being in Jhotwara, we serve a lot of the residents who live in the nearby blocks. We don't have a marketing team or any fancy slogans. We just put our heads down and get the cooking done. The summer heat in Jaipur makes the kitchen even hotter, but we are used to it by now. We focus on getting the food ready on time so people aren't waiting too long on the street. It’s a simple operation with just a few of us working behind the counter, making sure everything is bagged up correctly before it goes out the door.
