Kapsikum Fries & Grills

We've been at Vaibhav Complex for a while now. Most people know us because we're right by the Inox in Vaishali Nagar. It’s a busy spot, especially when a big movie lets out and everyone is looking for a bite. We just focus on the grills and making sure the fries aren't soggy when they reach the table. It gets pretty hot in the kitchen, especially during those long Jaipur summers, but we just keep at it. We don't have any fancy decorations or anything like that. It's just a simple place to sit for a bit and eat something hot. I usually start the day checking the potatoes and making sure the grill is scrubbed clean. My cousin helps out with taking the orders and keeping things moving. We see a lot of the same faces from around the neighborhood every week. It’s not a big operation, just a few of us trying to get things right. Sometimes the music from the mall nearby is a bit too loud, but you get used to it after a while. We don’t spend much time on the internet or worrying about reviews. If the food is good, people usually come back. That's how it works here. We keep the napkins stocked and the drinks cold. It’s simple work, really. Most evenings, there’s a bit of a line, so we just try to move as quick as we can. We are just a regular shop in a regular part of town.
