Julienne Restaurant

Julienne Restaurant is located on Janpath in Shyamnagar, right near the Dana Pani restaurant. We’ve been here in Jaipur for a while now. The kitchen is really where most of the action happens. It gets very hot and loud back there once the dinner rush starts. We spend the whole afternoon prepping vegetables and getting the sauces ready for the evening. There is a lot of chopping and stirring that goes on before we even open the doors for the main crowd. The floors have to be mopped several times a day because things spill and people walk in with dust from the street. We have a few tables outside, but they are only popular when the weather finally cools down in the evening. We aren't doing anything fancy or revolutionary with the food here, just serving the kind of stuff people like to eat when they go out for a meal. Sometimes the food deliveries are late and we have to scramble to find ingredients at the local market. It can be a bit of a headache, but we always make it work somehow. The staff is mostly local guys who have been working with us for a year or two. We know which chairs have a wobble and which burners on the stove are the finicky ones. It’s a very practical business. We show up, cook the food, and then clean everything up to do it again the next day.
