Setting up Jodhpurs Dhaba on Bajri Mandi Road was a big project for us. Being right there on the 200 Feet Road bypass in Vaishali Nagar means we see a lot of travelers and truck drivers passing through Jaipur. It’s a dusty part of town sometimes, but that’s just how the bypass is. We wanted a place where someone could pull over, stretch their legs, and have something to eat that tastes like home. We don’t have fancy menus or waiters in uniforms here. It’s just us and the kitchen. Most of the time, the air smells like spices and woodsmoke from the stoves. People come in looking tired from driving and they leave looking a bit better. We have plenty of space for parking, which helps since the road gets so busy. Sometimes the weather gets really hot, so we try to keep the seating area as breezy as we can. It’s not a quiet place, you can always hear the trucks going by, but that’s part of the charm of a real dhaba. We’ve been at this for some time now and we know most of the regulars who drive this route every week. We just focus on keeping the pots full and the tea hot. It’s a simple life running a dhaba on the edge of the city, and we like it that way.
