Saha Diners' Palace Llp

Somaspur is a quiet place most days but we stay busy enough at the Palace. It’s just us here in Dhaniakhali trying to keep the tables clean and the food moving out of the kitchen. My uncle started things off and now we just keep it going every morning from early on. Hooghly gets pretty hot in the summer so the fans are always running high. We spend a lot of time just prepping vegetables and making sure the rice is right. Sometimes the delivery truck is late and it creates a bit of a mess but we handle it. People around here know where we are, right near the main road area. It’s not a fancy setup with big lights or anything like that. Just some chairs, tables, and a kitchen that smells like spices all day long. I usually spend my afternoons checking the inventory or talking to the guys in the back about what we need for tomorrow. It gets loud when the lunch crowd comes in but that’s just how it is. We don’t have a big team, just a few of us who live nearby and walk to work. The floor gets a bit scuffed up from the boots but we sweep it down every couple of hours. It is a simple life running a place like this in West Bengal. We just open the doors and see who comes in for a meal.
