We opened Birryani Hut right here on Pradhan Nagar Road because we live nearby and noticed there wasn't a simple place to grab a plate of food without a lot of fuss. Siliguri is getting bigger every year, and this part of town, Pradhan Nagar, is always moving. We aren't doing anything fancy. It’s just me and two other guys in the kitchen mostly. Sometimes my nephew comes after his school to help with the tables. The road outside can get pretty dusty and loud with all the rickshaws, but we keep the shop going. We start our prep work early in the morning before the sun gets too hot. People from the nearby offices come in around one o'clock, and then it gets really crowded for an hour. We don’t have a big menu or anything like that. We just focus on what we know how to make. The chairs don't always match and the paint on the walls is peeling a bit near the door, but it’s a real place. We spend a lot of time cleaning the rice and cutting onions. It’s hard work standing over the big pots all day, especially in the summer. We close up when the food runs out, which is usually by nine or ten at night. If you’re walking down Pradhan Nagar and see the sign, that’s us. We just wanted to have a spot where people can sit for twenty minutes and eat before going back to work or home.
