Down at 85, Santhome High Road, you will find the place where we run Pizzeria Fast Food Restaurants (Madras) Pvt. Ltd. It is right near the coast, so we get a bit of a breeze when the doors are open, but the kitchen stays pretty hot regardless of the weather. We have been making pizzas and other quick food here for quite some time now. The interior has some old booths and wooden tables that have been around for years. It is a busy spot, especially in the evenings when the students and families are out walking by the water. We don't have a big corporate team; it is just a bunch of us in the back handling the dough and the ovens. The floor gets a bit slippery from the flour and the counter is usually crowded with boxes ready to go out for delivery. We hear the traffic from Santhome High Road all day long. Sometimes the ovens act up or we run out of a specific topping, and we just have to make do with what we have. It is not a five-star dining experience, just a local pizza shop where the cheese is melted and the crust is thick. We don't really change the menu much because people like the old stuff. People come back for the same things they liked years ago. We just keep the lights on and the ovens hot until the last customer finally leaves. It is a lot of cleaning up at night.
