APJ Catering is right here on Old M T H Road. If you know Venkatapuram, you know how busy it gets near that railway gate in Ambattur. We spend a lot of our day just managing the coming and going of supplies while the trains go past. It’s a noisy spot but it’s home for us. We started this because we knew how to cook for big groups without making a mess of things. Usually, our mornings start very early, way before the sun is up, just getting the fires going and chopping whatever came in fresh from the market that morning. It’s mostly just us and a few helpers running around trying to make sure the salt is right and the rice isn’t mushy. People around here know us by name, and we like it that way. We don’t have fancy offices or anything like that. Just the kitchen and the space we use to pack everything up for the local events. Sometimes the traffic at the gate makes deliveries a bit of a headache, but we’ve figured out the shortcuts over the years. We’ve seen the neighborhood change a lot, but the way we do things stays pretty much the same. It’s hard work, standing on your feet all day near those big stoves, especially when it’s hot outside, but it’s what we do. We just focus on getting the food to the tables and making sure there’s enough for everyone who shows up.
