Down here in Beybori, things move a bit slower than in the city. We spend most of our time dealing with jars and labels. Being near Nadu Vattam makes it easy for people to find us if they are passing through. There’s always a sticky spot on the counter somewhere, even if we just cleaned it. That’s just part of working with honey every day. We get the shipments in and then it’s all about getting everything into the right containers without making a huge mess. It’s quiet work for the most part. Sometimes the bees get a bit close to the windows but they don't bother us much. We keep the boxes stacked up in the corner until they are ready to go out. The shelves are full of different sizes of bottles. We don't really have a big staff, just a few of us making sure everything is sealed tight. You can smell the sweetness as soon as you step inside the door. It’s not a complicated setup. We just have our workspace and the storage area in the back. The neighborhood is mostly families and a few other small shops. We like being part of the community here. Every morning we open up the front and start checking the inventory. We have our routine of cleaning the equipment and making sure the lids are on straight. It’s just what we do, day in and day out, making sure the jars are ready for whoever stops by.
