Chef Talwar is situated in a nice part of Thiruvanmiyur. We are at No 2A, inside the Reviara Apartments at No 45 on 4Th Seaward Road. This is over in Valmiki Nagar, and the area has a very specific feel to it, being so close to the sea. The 600041 zip code is a good place to be. It’s a bit quieter than the main city center, which we appreciate. Our setup isn't very large. It’s just a simple space where we do our cooking and planning. We aren't trying to be a big corporate entity. It’s just us, a few people who enjoy being in the kitchen. We spend our mornings getting everything ready and our afternoons making sure everything is cleaned up. Being in an apartment building like Reviara means we have to be mindful of our neighbors. We’ve been here for some time and have gotten to know the people living on 4Th Seaward Road. It’s a friendly neighborhood. We don't have a big mission statement or a fancy philosophy. We just come in, do the work, and go home. Sometimes the sea breeze makes its way over here, which is nice during the hotter months. It is a very honest and straightforward way to run a business. We don't use any complicated systems. We just rely on hard work and being consistent with what we do every single day in Valmiki Nagar.
