Down in Thiruvanmiyur, we have our base in the HIG Flats at Kamaraj Avenue. It’s a quiet enough spot, right near Sankara School, so we often hear the kids playing or the bell ringing during the day. Our unit is at No 26 B, and it’s a space filled with stainless steel tables and a lot of heavy equipment. Being in Chennai, the heat is something we just deal with every day in the kitchen. We spend most of our hours chopping, stirring, and packing things into those big thermal containers. The neighborhood knows us mostly by the smell of the cooking that drifts out into the lane. We don’t really do much advertising or anything because the work keeps us busy enough as it is. Sometimes the delivery guys are rushing in and out, trying to navigate the narrow roads of Thiruvanmiyur to get to weddings or small house functions. It’s a tight-knit operation here. We have a few old fans that creak a bit, and there’s always a list of ingredients pinned to the wall. It’s not a glamorous job, but there’s a certain satisfaction when the kitchen is finally cleaned up at the end of a long shift. We’ve been at this address for a good while, and the HIG flats have become like a second home to all of us who work here together every single day.
