Role Over Kebab

Our little spot is Shop Number 23 A in the Appels Night area, right off VIP Road here in Chandigarh. If you’ve ever walked by in the evening, you’ve probably smelled what’s cooking. It gets pretty smoky inside when the grill is going full tilt, but that’s how you know the food is actually being made fresh. We aren't a big fancy restaurant with white tablecloths and waiters in suits. It’s mostly just us back here handling the dough and the skewers while people wait for their orders. The 160001 area gets a lot of traffic, especially on weekends, so it can get a bit hectic around the counter. Sometimes we run out of a certain sauce or the bread takes a few minutes longer because we’re making a fresh batch, but we try to keep things moving. We’ve had this shop for a bit now and the walls have a few scuffs, and the chairs are just simple ones for people to sit while they wait. We don't spend much on decorations or flashy lights. Most of our day is spent prepping the meat and chopping onions. It’s hard work, especially when the heat from the kitchen hits you, but we’re used to it. We just want to make sure every roll or kebab that goes out is something we’d eat ourselves. It’s just a normal shop doing its thing on a busy road.
