24 By 7 Restaurant (The Lalit)

We've been here at The Lalit in Chandigarh for a while now. Being inside the Rajiv Gandhi IT Park means we see a lot of people from the nearby DLF Commercial Complex coming in at all sorts of hours, day and night. Since we are open 24 hours, the vibe of the place changes a lot depending on exactly when you walk through the doors. In the middle of the night, it’s mostly folks working the late shifts in the IT offices who just need a quiet place to sit and have something to eat before they go back to their desks. Then the morning comes, and everything speeds up with the breakfast crowd and people heading into meetings. The staff here is used to the changing pace. We don't really do anything fancy or over-the-top, we just keep the kitchen running so there's always something ready to eat. Sometimes the coffee machine gets a real workout, especially around 3 or 4 AM when everyone is feeling tired. It’s a large space but it can get pretty loud when the lunch rush hits from all the offices nearby. We try to keep things tidy, though with people coming and going constantly, there's always a table to wipe down or a chair to move back into place. It's just how a 24-hour place works. You get to know the regulars, the ones who always sit in the same corner with their laptops. It’s a bit of a marathon for the team.
