Rohit dhaba

You can find Rohit dhaba right on the main road heading into Chandigarh 160101. It is a simple setup like most dhabas you see while traveling. We have been sitting on this stretch of road for a good while now. The place is mostly open air so you can feel the dust and the breeze from the trucks passing by. We don't have a menu with a hundred things on it. We just make what we know, like dal and rotis, and we keep the tea pot going all day long. The kitchen is always hot, and there is usually a lot of smoke from the tandoor. It’s hard work, especially when the sun is out and the road gets busy with traffic. We don't have a big office or a manager in a suit. It is just us in the kitchen and a couple of boys helping with the tables. The benches are made of wood and have seen a lot of use over the years. We keep the place open late because that is when the long-distance drivers need a place to stop and eat. Sometimes the rain comes down hard and we have to move everything inside quickly. It is just a regular life on the highway, nothing special or polished about it. We just stay busy and keep the food ready for whoever stops. It’s a simple life out here on the road.
